Ingredients

  • 1/2 cup olive oil
  • 2 tablespoons white wine vinegar
  • Juice of 1 lime (about 2 tablespoons)
  • 1 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 tsp garlic powder
  • 1 pound Roma tomatoes, seeded and diced
  • 1 (15 ounce) can black-eyed peas, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup fresh or frozen corn
  • 1 medium red onion, diced
  • 1 bell pepper, diced
  • 1 jalapeno, seeded and minced
  • 1 cup chopped cilantro (about 1 bunch)
  • 2 avocados

Instructions

  1. Combine all ingredients except avocado and mix well. Chill at least 1 hour.
  2. Just before serving, dice avocados and add to bowl. Toss well and serve with tortilla chips.
